This is a shout out to Head Chefs who share our passion for producing awesome food using the best produce the UK and Europe have to offer.

Padella Shoreditch’s Head Chef of Production and Bakery have to have a passion for food that extends well beyond their professional life. A passion for European food wine making and dining culture along with a deep interest in the British & European food calendar and someone who really cares about where their produce comes from and what it’s doing to our planet.

Training, mentoring, delegation and organisation are a core part of how we operate at Padella and the Head Chef needs to be Highly organised, systemised, a passionate trainer and enabler allowing the Chefs to learn and develop their skill set under their careful support and supervision.

The Padella Story

Jordan and Tim, who opened Trullo together in June 2010, have long dreamed of having a pasta bar that served the best hand-rolled pasta with authentic, slow-cooked Italian sauces; together with a small number of exceptional wines coming straight from the barrel, an Italian cocktail list and a few of their favourite ice creams, pastries and sourdough bread, produced on site.

Padella has become known for it’s fresh pasta rolled and shaped daily and served in fun, informal and buzzing restaurants. You’ll be trained and nurtured by our experienced team and our aim is for you to develop as Baker and there is always room for growth to the next step…. Aside from working with kick ass teams in sexy restaurants, we also go on regular trips around the UK and Italy to visit our farmers, millers, wine makers, olive oil producers and other restaurants for epic lunches!

Role snapshot  

Product, Learning and Development

●      Being an expert on our menu, cooking techniques, provenance, supplier information and ethos, by fully understanding our Creative Director’s expectations, methods & beliefs.

●      Overseeing & ensuring the highest standards of staff product knowledge, through engaging with Senior Chefs Teams, utilising our detailed Progression Plans and On-Boarding Processes, and by scheduling regular training sessions, where required.

●      Working with the Creative Director and Executive Chef on implementing new dishes & batch recipes for Bakery & Kitchens.

●      Leading the Senior Chefs to ensure that Kitchen performance notes and progression processes, support and ceremonies are adhered to. Create a culture of nurturing, monitoring & celebrating success.

Financial & Reporting

●      Assume full responsibility for the Production and Bakery operations.

●      Continue Padella’s status as one of London’s great independent restaurants, with the highest standards of seasonality, artisan and ethically sourced produce at high street prices.

●      Oversee the creation and recording of orders in line with company policy and the needs of the business and coach any new senior chefs to be able to do so.

●      Ensure complete control of the food, costs of sale, GP and menu item costings through weekly stock takes and analysis.

●      Perform the Monday office duties, Labour / Financial and Performance analysis / Health & Safety / Rota & HR and report weekly in a format set out by the Ops Manager to Directors & Ops.

●      Monitor feedback and sales of dishes, including but not limited to, customer feedback, online feedback and senior staff feedback. Assess any areas of consideration and present at the weekly managers meeting.

HR

●      Be an expert on our recruitment and progression processes, maintain Padella HR standards

●      Work in collaboration with GM to ensure that Kitchen & Floor performance notes and progression processes, support and ceremonies are adhered to. Create a culture of nurturing, monitoring & celebrating success.

●      Lead & motivate a team of Chefs in a positive and engaged manner and create a culture which encourages the highest standards of professional behaviour in the kitchen team

Legal, Health & Safety

●      Be trained to at least Food Safety Level 3

●      Be fully conversant with health and safety, food safety and HACCP.

●      Ensure the Company’s Health & Safety and HACCP policies are adhered to at all times.

●      Monitor and act in line with feedback in relation to the In-House Audits.

●      Ensure that all potential and real risks, hazards are reported immediately and rectified.

●      Be fully conversant with all departmental Fire, Emergency and Bomb procedures –

●      Emergency procedures are rehearsed quarterly with attendance records, implemented, and enforced to provide for the security and safety of guests and employees.

●      Stimulate and encourage a general awareness of Health and Safety and Food Safety in relation to all tasks and activities undertaken in the department.
