Established in 2012 the Gladwin Brothers “Local and Wild” concept has been at the forefront of farm to table cookery. We have four sites: The Shed, Rabbit, Nutbourne and Sussex with a new opening planed for the autumn. Our secret is our procurement hub in Battersea where we pool produce from farms across the southeast of England to serve in our restaurants.

We are on the hunt for a Farm to Table manager to manage the day to day of the food movement from the farms into to the restaurants. We need the successful candidate to focus on seasonality and work with chef director Oliver Gladwin with nose to tail butchery and standard dishes that are served within the restaurants.

The Role

– Food and wine purchasing and ensure smooth delivery to our procurement hub

– Detailed analysis of the seasonal changes and produce

– Weekly market runs

– Relationship management with small to medium sized farmers

– Food preparation from farm to restaurant ready

– Data inputting and tracking e.g. detailed stocktaking

– Driving

The Skills

-Restaurant chef experience (senior sous or head chef) and must be competent in:

  • Butchery
  • Pastry
  • Efficient MEP

– Sustainability savvy

– Excellent knowledge of British seasonal food

  • Game season
  • Wild foraging
  • Campion vegetables
  • Traditional seasonal dishes

– Excellent computer skills with particular focus on Excel

– Full UK Driving licence
