MOI, the first in a series of innovative restaurants from the Login family, is a
collaboration between a father-and-son duo celebrated for establishing the globally
renowned patisseries, L’ETO. With a focus on seasonal ingredients, authentic interiors,
and unparalleled hospitality, MOI sets the stage for a fresh wave of culinary excellence
in London’s vibrant and dynamic food scene. This marks the beginning of a new chapter
for the Login family, bringing their signature warmth and artistry to the city’s dining
landscape.
MOI is a Japanese restaurant in Soho, offering an inventive fusion of Japanese flavours
with a modern, elevated twist. The eclectic team at MOI brings together a range of culinary expertise, each skilfully showcased in every dish.
Led by the Executive Chef Andy Cook the kitchen embraces Japanese cuisine as a
canvas, highlighting peak-season ingredients and global influences to create dishes
that are both complex and inviting. Specialising in meats and whole fish cooked over
charcoal, MOI brings a smoky depth to its offerings, enhancing flavours with a signature, refined touch.
The food is complemented by an eclectic range of exciting, uniquely chosen, premium
yet approachable wine, with a focus on low-intervention and biodynamic; a craft beer
collab and a signature cocktail menu with emphasis on carefully sourced and curated,
craft spirits, sake and accented by the same Asian influences as the food.
Named with a nod to Soho’s vibrant culture, MOI, literally translated as a ‘bowl’,
presents a Neo-Japanese dining experience in a relaxed, stylish space where guests
can savour the atmosphere as much as the food for patrons to see and be seen.
Role Overview
We are seeking a Beverage Manager with a deep passion for low-intervention, natural
wine, sake and craft spirits to curate and lead an exceptional beverage program that
reflects MOI’s vision. This hands-on role combines creativity, expertise, and leadership
to deliver a unique and memorable guest experience.
You’ll work closely with the restaurant team to develop and execute a beverage
program that complements our culinary offerings while fostering a culture of education,
inclusivity, and excellence. Your expertise in low intervention wine and sake will help us
stand out as a destination for innovative and thoughtfully curated beverages.
Key Responsibilities
• Develop a cutting-edge beverage menu with a focus on low intervention wine and sake.
• Maintain an inventory that aligns with the restaurant’s ethos and sustainability goals.
• Build strong supplier relationships to source unique and high-quality offerings.
• Lead, inspire, and support the front-of-house team in delivering an exceptional beverage experience.
• Conduct in-depth training sessions on wine and sake, fostering knowledge and enthusiasm within the team.
• Recruit, train, and mentor a high-performing beverage team, encouraging accountability and growth ensuring a collaborative approach between bartenders, sommeliers and waiters to create an unrivalled guest experience
• Engage with guests to share the story and nuances across the full beverage programme, creating unforgettable dining experiences.
• Collect and act on guest feedback to continuously enhance the beverage offering.
• Set and manage beverage budgets, controlling costs while maximizing profitability.
• Monitor performance metrics to reduce waste and drive revenue.
• Ensure all beverage service meets health, safety, and licensing regulations.
• Work closely with the Head of Beverage and the culinary and service teams to align beverages with menus and MOI’s overarching vision.
• Represent the restaurant at industry events, building MOI’s reputation as a
standout destination for low-intervention wine and sake.
What We’re Looking For
• At least 5 years in a senior role overseeing a beverage program, ideally in a high end or fine-dining restaurant.
• Proven expertise in wine and sake, with strong relationships in the industry.
• Inspirational leadership and excellent communication skills.
• Deep knowledge of beverage trends, sustainability practices, and guest engagement strategies.
• Strong financial acumen, with experience in budgeting, cost control, and performance analysis.
• Proficiency with restaurant management systems (POS, reservations, inventory).
• Warm, approachable, and passionate about hospitality.
• Strategic thinker with a practical and creative mindset.

Work Schedule
• 5-days work week, including weekends and evenings, 45 hours circa (flexibility
required to oversee operations during peak hours and special events)
