Rambutan in Borough Market is looking for a sous chef to help lead the kitchen team. Inspired by the fire cooking in Sri Lankan villages, Rambutan is centered around an open kitchen, cooking on charcoal grills, reflecting the food from Sri Lanka and from Sri Lanka’s immigrant communities in London.
We have had an amazing first year and are looking for a committed, passionate chef to help lead the kitchen and to fall in love with Sri Lankan food, cooking fiery curries, fresh sambols, stir fried dishes, grilled dishes, and hot buttery rotis. Our philosophy is about taking great care of our team, working with amazing producers, and cooking diaspora Sri Lankan food simply and seasonally.

You will:
Be a passionate, can-do and emotionally intelligent leader, able to motivate the team and set high, inspiring standards.
Lead by example, helping support the head chef with a dynamic, constantly changing menu, a culture of championing great produce, teaching, guiding and inspiring the team.
Have been a sous in a similarly busy restaurant previously, and feel comfortable with the challenge of high volume cooking.
Enjoy working in an open kitchen, creating a “one-team” feeling with front-of-house and interacting with guests.
Not necessarily have cooked Sri Lankan food before but you will be passionate about learning about it!
