About Us:

Fabrique is an artisanal stone oven bakery from Stockholm, Sweden. What we do is simple, but far from the ordinary. We use fresh, natural ingredients and traditional methods to make artisanal pastries and sourdough bread. After a success of opening 19 shops since 2008 back home in Stockholm, we have been captivating London’s hearts with our bread and cinnamon buns. We now have 6 shops in London, and 1 in New York.

We are searching for a new Head Baker to our bakery in Central London that currently supplies to our five additional units as well as whole sales.

Job Description:

  • Run daily operations of the bakery
  • Train and supervise bakers and junior members of the bakery
  • Ensure the staff uses proper baking techniques
  • Maintain employee work schedules; assign daily baking tasks; and make referrals for advancement, discipline, termination and retention.
  • Responsible for producing and baking the product range requested by the owners, standard as well as seasonal variations
  • Maintenance control of baking equipment.
  • Train other bakers to operate equipment according to proper sanitation and safety standards. · Make sure that the bakery meets health & safety regulations
  • Clean kitchen equipment and tools before use
  • Adjust oven temperatures to ensure proper baking
  • Track food supplies and place orders, as needed

The Ideal Candidate:

This role would suit a candidate with experience in a similar position as well as a positive attitude to fit in with our company ethos.

Competencies:

  • Ability to produce bread and other baked goods using manual and industrial processes
  • Knowledge of raw materials for dough, dough preparation times and procedures and various baking

Techniques:

  • Knowledge of recipes and production techniques for bread and baked goods
  • Ability to operate electric, gas and wood-fired bread ovens
  • Knowledge of health, safety and hygiene regulations for food preparation
  • Ability to multitask
  • Organizational and planning skills
  • Ability to work night shift
