Opening summer 2021, Catch will be a unique dining experience, based in Weymouth’s historic, grade-II listed, Old Fish Market. A restaurant set amidst the colour and energy of a working quayside, tied to the local fishing community and committed to uncompromising sustainability, with the small, inshore boats of the Weymouth fleet – including our own – landing and weighing-in at Weyfish, our traditional harbourside fishmongers, right below.

Exceptional fish and shellfish of unequivocal provenance. Not only do we know when every crab, brill, bass, dory or any one of over 40 local species was caught, we know how, and on which boat, and by whom. Complemented by shared ownership of a local aquaculture business farming our own seaweed, oysters and mussels. Paired only with seasonally selected ingredients from Dorset artisan producers, none based more than a few miles from the restaurant.

We have a beautiful space for 44 covers, painstakingly refurbished and completed with a custom, state-of-the-art kitchen. The project is comprehensively funded, with a clear focus on achieving a Michelin Green Star for sustainable, ethical and environmental practices.

Who we’re looking for:

This is a rare opportunity to be involved in something unique from its inception. To help define its creative personality and collaborate in its vision. We’re looking for someone capable of creating dishes that live up to the quality of the produce, who shares our fascination with local producers and artisan products and for whom sustainability is an absolute.

You will hand pick and lead the culinary team, forging a kitchen culture, with the freedom to devise and deliver a constantly changing menu that reflect the ethos of the project and showcases the freshest possible seafood, subject to the seasons and the weather and the tides. You’ll manage food costs, stock control and supplier relationships, and critically, help meet the restaurant’s zero food waste target.

You don’t need to be an experienced Head Chef, although of course you might be. You don’t need to be local. We can help you relocate. We care more that you are passionate, obsessive, driven, creative and well organised. Looking for the ideal opportunity to embrace the responsibility of leading your own, successful, kitchen team.
