About Us:

Cin Cin is an independent Italian food & drink brand founded in Brighton by David Toscano with chef Jamie Halsall.  Focusing on handmade pasta and Italian dishes using seasonal British ingredients, we are obsessed with quality and consistency for our food and service. Our two restaurants in Brighton and Hove hold a Michelin Bib Gourmand and AA two Rosettes.  

We are a small team committed to supporting, developing and progressing our staff and the brand.  We are very hands on and we hire people we see potential in to trust them with responsibility and to grow.  As a neighbourhood style restaurant, our regulars are the backbone of our business so we know our customers and community well, and we want to reward their loyalty with an engaging and enjoyable dining experience.

Job description

This is an opportunity to lead the opening of our first London restaurant and work side by side with our founders David & Jamie. You will have full responsibility for and management of kitchen operations at our London site, making sure the food & service we deliver is of the highest quality. You will get to work with our Exec Chef Jamie Halsall and learn from our existing Brighton and Hove sites to bring Cin Cin to London.  We have a tight and regularly changing menu with seasonal small plates, fresh handmade pastas, Italian mains and desserts as well as house made bread so lots of variation and areas to make your mark on. And you will help set the bar and maintain our drive for high standards of staff knowledge on menu, providence, supplier information and techniques through on-boarding and training of kitchen staff.

The Ideal Candidate

As our part of our first London restaurant team, we are looking for candidates who can lead but are also a team player - someone who is able to problem solve the challenges of opening and running a busy restaurant so that the experience is enjoyable and calm for staff and customers. You have worked and succeeded in a fast paced, high quality environment with good  experience in a management role and have a strong understanding of the financial side of running a profitable kitchen. You have strong people skills and are excellent at communicating not only what is required but why.  You have a proven track record in developing and growing a team. Experience with Italian food and cooking would be beneficial, but it is not essential. Most importantly we are looking for someone with a real passion for food, service and hospitality, and a love of cooking simply and seasonally. You are extremely clean and well organised, motivated, friendly and approachable even under pressure.  You want to grow with our business and be a long-term member of our team.
