About Us:
Frank’s Cafe is an independently run rooftop bar in South East London, and the flagship architectural commission of Bold Tendencies, a not-for-profit arts organisation in Peckham. Located on the roof of Peckham’s multi-storey car park, with stunning views of the London skyline, Bold Tendencies has become one of London’s most iconic and talked about summer destinations. Bold Tendencies is unique in terms of the rich mix of what it does, commissioning site-specific art and new architecture as well as producing an ambitious live events programme of orchestral music, opera and dance.
Since 2009 Frank’s Café has served up delicious food and drink for the many thousands of visitors to Bold Tendencies every summer, and we are looking for motivated and energetic executive chef to lead the kitchen for our upcoming summer season.
Job Description:
The role will have four main focuses:
Menu
- Finalising specs and recipes from existing templates
- Calculating prices and GP’s
- Finalising mis en plaice lists
Team
- Recruitment and training of a full kitchen brigade
Operational
- Overseeing fast paced services
- Working pre-opening to design kitchen specs and layouts
- Rota writing
- Line management of the kitchen brigade
Administrative
- Ensuring all H&S paperwork is completed on a daily basis
- Ensuring kitchen GP calculations are managed on a week by week basis
- Building and implementing stock management and ordering systems
The Ideal Candidate:
- Have solid experience of managing a 10+ kitchen brigade
- Have a minimum 2 years’ experience running a high-volume kitchen
- Have a strong understanding of kitchen H&S best practice
- Have extensive experience of kitchen costing, pricing and stock management
- Be able to demonstrate excellent organisation skills with an ability to prioritise a busy schedule
