SOUS CHEF
LOCATION: SHEFFIELD
An exciting time to join our team at our brand new restaurant in Oughtibridge Mill Sheffield.
Tasting Menu, 4 day week, 5 week annual closures for holiday. Lots of opportunities to take part in events including chef collaborations and external events at a variety of venues.
Main Tasks:
1. Supervise the preparation of all food
· Ensure all food is prepared as per food hygiene safety preparation requirements
· Ensure all products are produced on time, and sufficient quantities are available for the various areas/services
· Maintain stock levels of all kitchen supplies
· Prepare daily item requirements as per the menu
· Be available for functions/events as they arise to ensure that the food is prepared and served as required
2. Oversee and supervise all kitchen staff
· Recruit when required, via posting of advertisements, interviews and trial shifts
Ensure all staff are aware of their duties and what is expected of them
· Teach new staff skills they require to perform their roles to the required standard
· Delegate duties to kitchen staff as per the menu requirements
· Oversee and monitor the work of kitchen staff to ensure all tasks are done as required and to the highest standard
· Give staff feedback on their performance to enable staff development
· Ensure any staffing issues are resolved fairly and quickly
3. Manage kitchen stock
· Ensure wastage is minimised by careful supervision of food preparation methods
· Ensure proper hygienic storage methods are utilised to prevent food loss
· Ensure the security of all stocks
· Oversee the ordering and control of stock levels
4. Ensure catering staff are working safely at all times
· Ensure staff are aware of and follow safe work practices at all times
· Assist other staff in the cleaning of the kitchen at the end of the shift and weekly deepcleans
· Ensure your own work station is kept clean and hygienic at all times
· Ensure recycling and sustainability is considered at every available opportunity.
5. Assist the Head Chef as required
· Work alongside all staff at JÖRO in a friendly manner.
· Liase with suppliers and contractors, keep good relationships and monitor costs/budgets
· Menu Development, testing and implementation. Including seeking sign off from directors and working to advertise and successfully launch new menus.
· Pay careful attention to the operating budgets of the business to ensure that costs are controlled to maintain the correct levels of spending on food, consumables & wages.
Work with Marketing and retails teams to deliver brand products/events/awareness
Working on events and private dining, preparation, service, guest interaction and cleandown.
