About us
Fat Macy’s is an award-winning social enterprise that uses our restaurant and catering businesses to train and support Londoners living in temporary accommodation and help them move into their own homes. Our unique model combines excellent food with a social mission.

Founded in 2016 as a roving supper club, our work has been featured on BBC 3, VICE, Time Out and many more.

Sohaila, our second restaurant, opened earlier this year in the heart of Shoreditch, serving Lebanese-inspired small plates with an extensive natural wine library and basement bar. We’re at an exciting moment as the venue is gathering momentum and we’re building the core team.

About The Role
We’re looking for someone with the expertise and ambition to help us take Sohaila to the next level in terms of our food, our team and our systems and processes. This is an opportunity for a committed, enthusiastic head chef to play a pivotal role in our growing social business. You’ll help us set up Sohaila and work closely with the Business Director and Executive Chef to realise the vision and build the systems as we grow.

This is also a chance to combine your skills with a role that contributes to tackling one of the most urgent social issues the country is facing – homelessness. Alongside delivering excellent food with an ambitious team, you’ll be able to provide meaningful support to our trainees and act as one of a team of mentors as they complete the programme.

What you’ll do

In the kitchen:

  • Be able to create systems to “carbon copy” for easy expansion.
  • Work closely to streamline processes and improve consistency.
  • Menu engineering and development to maintain high GP’s, low wastage and improving average spend per head.
  • “Measure and Maintain” low labour costs and set targets for the team.
  • Streamline in-house “central production” to ensure consistency of recipe production.
  • Measure and manage the success of the Shoreditch site.
  • Working with and reporting to Directors and managers on progressions of systems and changes. There is scope to take a large responsibility in some of the event management – ensuring the smooth planning, delivery and follow up on all external catering events.

  • Fat Macy’s aims to embed its ethos and mission into every area of the business. We want to create a truly social business: finding local, ethical food suppliers for every step of our supply chain. From social enterprise bakeries, to sustainably sourced fish, through to napkins and crockery, your mission will be to assist the Business Director in making the right choices both for the business, and the planet.
  • From orders to stock, to keeping track of budgets, you’ll work with the Business Director to ensure we always have the stock we need, keep the finances healthy and budgets are in order.

The ideal person

  • You have 3+ years experience at Head Chef level
  • Experienced with line management and improving performance
  • A solid understanding of managing food business costs
  • Health and Safety, licensing and compliance and HACCP experience
  • A genuine enthusiasm for our social mission – you’ll enjoy working with Londoners of all walks of life and be ready to mentor and support them in their journey with Fat Macy’s
  • You will be able to manage relationships between the kitchen team and trainees.
  • You’re a team player – ambitious but a good listener, who works well with others.
  • You’ll be organised, great at multitasking and prioritisation.
    You’ll have excellent interpersonal communication skills.
