Bar Lead / Mixologist, Plates Restaurant
Hours: Full-time (45 hours per week) OR part-time (20 – 30 hrs per week)

About Us: Plates, founded by Keeley and Kirk Haworth, is an ambitious, plant-led food group with divisions in London and France. Plates Restaurant is our one Michelin star fine-dining restaurant in Shoreditch, where this role will be based.
Alongside our restaurant, in 2025 we launched Plates farm and retreat in South-West France, and in February 2026, we will open our creative studio next to the London restaurant, a space dedicated to innovation and development across food and drink. This dedicated space is where our current and future team explore and develop new ideas, and continue to push the boundaries of plant-based.
Job overview: The Bar Lead / Mixologist holds a central position within our London team.
This position sits in the heart of our Shoreditch restaurant so you must be personable, welcoming and work efficiently – your space will be in full view of the guests so cleanliness and organisation is really important, as well as always displaying naturally warm and welcoming demeanour at all times.
You will be designing and managing an innovative drinks list that reflects and complements Plates unique approach to plant-based cooking. Working side-by-side with the chefs to maximise the crossover of seasonal ingredient use, techniques, ideas, and reduce wastage.
You’ll be expected to design and create beverages in collaboration with our founders, and report to the Head of Wine, Alexandra Price, with detailed monthly figures (GP, invoicing, financial tracking, cost reviews, stock management and recipes).
Maintaining high standards across the brand, as well as efficient time management, is imperative to ensure seamless service between kitchen, front-of-house and bar.
The perfect candidate will:
- Have at least one-year experience working in Michelin star dining, or equivalent
- Be passionate about flavour development and producing world-class beverages
- Proudly possess meticulous and thorough approach to all elements of their work, from prep, to final delivery, and guest interaction
- Be highly organised, time-efficient, and proactive in your daily work
- Be a positive brand ambassador, live and breathe the Plates values
- Be a supportive, enthusiastic team player with a resourceful, can do attitude
- Stay ahead of industry trends and constantly evolve your knowledge
Your duties (including, but not limited to):
- Drinks creation and development, including presenting ideas to management
- Working with Head of Wine to ensure the bar profits meet targets
- Manage stock and inventory
- Maintain drink recipe documentation
- Ensure bar cleanliness and safety
- Initiate and maintain vendor relationships
- Expertly guide and advise guests on the menu – flavours, ideas and dietaries etc.
