Restaurant Manager, Brat
Brat (Shoreditch) opened in 2018 led by chef Tomos Parry with Ben
Chapman and Brian Hannon from the Super 8 group. Brat is inspired by
Tomos’ travels to the coastal towns of the Basque Country and his Welsh
heritage- drawing similarities in the landscape, produce and ways of
cooking. The menu at Brat is based around sourcing immaculate produce
that we simply cook over fire which is informed by the close
relationships we have forged with our growers, farmers and fishermen
whom we have been working with since day 1.
Our menu changes frequently with our team holding daily briefings around
the open kitchen to develop dishes, tastings, and sample new wines from
the menu. Our wine team work closely with Keeling Andrew Co. and small
auctions to create a list of 250+ wines with our bar team developing a
seasonal drinks menu.
Our team has grown and achieved numerous accolades including gaining a
Michelin Star, placed in the Worlds 50 Best list and most recently come
in as London’s third best restaurant from the National Restaurant Awards.
Brat’s core belief is that restaurants can be better connected to
farming and the seasons and we encourage our teams to progress their
understanding of this through specialised team training and regular
visits to our farms and growers.

As Restaurant Manager, you will be responsible for the delivery of exceptional guest service. The right candidate will be a hands-on, proactive leader who can enthuse and inform through daily shift briefings and regular team meetings.
Your responsibilities include the overall performance of Brat’s front of house team, recruitment and team development, managing the daily and weekly financials, stock management and health and safety.
