Assistant General Manager & Senior Sous Chef, Sam's Riverside

About Us:

 

Sam’s Riverside is the brand-new venture from Sam Harrison, who was the owner-operator of Sam’s Brasserie in Chiswick and Harrison’s in Balham for 10 years. Opening in September as part of the major refurbishment project of Riverside Studios. This will be a destination venue with its location right next to the Thames and stunning views of Hammersmith Bridge.

 

The kitchen is headed up by Rowley Leigh as Culinary Director and Harvey Trollope as Head Chef who has worked at The Ritz with John Williams & Wheelers of St James with Marco Pierre White. The restaurant will focus on seasonal, fresh & high quality food cooked in a beautiful brasserie setting. The Front of House will be headed up by Andrew Bloomer a Harrison’s Alumni who recently spent time at Selfridges and Fortnum & Mason, the service offering will be of the highest quality but with a relaxed charm that will match the aesthetic of the restaurant.

 

The 80-cover restaurant; including a 14 cover Private Dining Room will offer – Breakfast, Lunch & Dinner as well as deliver a strong and interesting wine list with delicious cocktails. The cocktail list will be designed in the aperitivo style and the combined offering will encourage diners to enjoy a comprehensive dining experience paired with traditional conviviality and charm.

                                                                                                             

Job Descriptions:

 

Assistant General Manager:

 

A leadership role within a business where Customer Service and Quality Control are the main focus. This role is centred on ensuring our customers have the memorable experience that Sam’s Riverside will become synonymous for, as the business develops.

As the Assistant General Manager, you will be the General Manager’s go to person, a Second-in-Command who is ready for the challenge of an opening and knows what it takes to deliver on high expectations. You will have a team of Assistant Manager’s below you to call on, so delegation and trust will become important skills to master.

This role requires a hands-on approach and will be a floor-centric role that provides the crucial oversight needed to deliver the level of service we are aiming for at Sam’s Riverside.

 

Key Responsibilities:

 

Leading service & providing managerial support to the GM and Owners:

 

 - Delivering on Level of Service expectations

 - Provide training & development support for our team

 - Being a key point of contact for all team members and customers; this will require taking ownership of a variety of situations

 

Expertise:

 

 - A wine background would be advantageous, you don’t have to think of yourself as the next Oz Clarke but we would certainly enjoy the support of a Wine & Spirits aficionado.

 - Experience in Volume Service as well as High End dining is a must, we have high hopes and serious aspirations so we want the same from you.

 - We are devout Hospitality managers and are trying to re-shape our industry to show the skills and benefits of working in our business by being role models and experts in delivery.

 - Real people managers will succeed with us and those people who understand what a team really needs to flourish.

Senior Sous Chef:

 

A leadership role within the kitchen where Quality Control and Menu Creativity working in-conjunction with the Head Chef are the main focus. This role is centred on ensuring our customers have a memorable meal experience, which will be a defining point of our service offering at Sam’s Riverside.

As the Senior Sous Chef, you will be the Head Chef’s go to person, a Second-in-Command who is ready for the challenge of an opening and knows what it takes to deliver on high expectations. You will have a team of chef’s around you to call on, so delegation and trust will become important skills to master.

Passion & flair for cooking are obviously a must but key skills are needed in productivity and motivation to ensure the kitchen can deliver on high volume services at key periods.

 

Key Responsibilities:

 

Leading service & providing managerial support to the Head Chef and Owners:

 

 - Delivering on Level of Service expectations – including Food Hygiene and Food Handling Best Practices.

 - Provide training & development support for our team

 - Being a key point of contact for FoH Management; this will require taking ownership of a variety of situations and being responsible.

 

Expertise:

 

 - A background in one or more of the following; Quality Brasserie, Bistro, Luxury Dining and 5 Star Hotels would be advantageous.

 - Experience in Volume Service as well as High End dining is a must, we have high hopes and serious aspirations so we want the same from you.

 - Passion for Continental, British and Northern European Cuisines will sit nicely with our vision for the business.

 - We are trying to re-shape our industry to show the skills and benefits of working in our business by being role models and experts in delivery.

 - Preparation for service and delivery of product – will need to be in the forefront of your mind.

 - Understand the need for personal standards and the effect this has on team around you, not just in presentation but ensuring that only quality product reaches our customers.
