Bubala has gone from sold out pop up (including stints at Carousel, Berber & Q and Untitled Bar) to a busy 36 cover restaurant having just opened next to Spitalfields in September.
We are a Middle Eastern vegetarian concept with a focus on bright, punchy flavours designed to share, taking inspiration from our travels across the region.
Behind Bubala is Marc Summers (founder and ex GM of Berber & Q) and Head Chef Helen Graham, who has worked at The Palomar, The Barbary, The Good Egg and Ottolenghi.
Due to its growth, popularity, and dedication to promoting within, Bubala is already looking to grow its amazing team!
- Overseeing day-to-day bar operations focusing on cocktails, wine, homemade soft drinks, ferments and beers, working alongside another manager who will be overseeing the private dining room operation.
- Creating a succinct but exciting cocktail menu as part of the current Bubala menu
- Understanding the food offering and serving guests across the bar
- Stock management
- including monthly stock takes
- ordering and maintaining stock levels: reporting orders/deliveries and cross checking with invoice and tracking GPs
