Brick House is an award-winning sourdough bakery and café with branches in East Dulwich and Peckham. The focus of our bakery’s offering has always been on quality and consistency over volume, which is reflected in the customers we supply, who include Neal’s Yard Dairy, La Fromagerie, Duck Soup, The Canton Arms, Frenchie, and Brunswick House.
Brick House is looking for an experienced baker to head up the bread & pastry offering its bakery in East Dulwich, London. As Head Baker, you’ll be leading a small team of passionate bakers and pastry chefs, maintaining the quality of our offering, keeping the team motivated and energised, and helping drive the business forward.
The Ideal Candidate
Will be a passionate & creative baker with a proven track record of making and baking high-quality bread using natural fermentation, as well as laminated and enriched doughs. Management experience is essential; an organised person who has a good understanding of the numbers and administration side of the business, including managing staff rotas, customer orders, department schedules, stock, supplier relations and be fully proficient in food safety and HACCP procedures.
You will be working with established formulas that our customers have grown to love, but there is on-going scope for developing new and seasonal products, different ways of working and forging relationships with new suppliers.
