Described by the Financial Times as “Scotland’s Hottest Hotel”, The Fife Arms is a Victorian coaching inn that has been imaginatively restored. The hotel is located in the historic Scottish village of Braemar amidst the majestic landscape of the Cairngorms National Park.
The main function and purpose of the Head Chef for the Clunie Restaurant, will be to ensure the consistent preparation of innovative and creative cuisine of the highest quality, presentation and flavour, resulting in outstanding guest satisfaction.
The Head chef must operate within the guidelines and philosophy outlined by the vision of Niklas Ekstedt (NE), Thomas Edifors (TE) & the Executive Chef, and aim to lead the restaurant team to success through creating a positive working environment and leading by example at all times.
Additionally, the Head Chef will have responsibility for the smooth running of the Clunie kitchen and managing areas of stock, wastage control, hygiene practices and training within the department.
Day-to-day, the Head Chef will report directly to the Executive chef, and will receive guidance and support therein, but will also be expected to operate as part of The Fife Arms kitchen team as a whole, and should conduct themselves accordingly.
The Ideal Candidate:
The ideal candidate will ideally have experience of wood fire cooking although this is not essential. Most important is a desire to learn and understand the possibilities offered by this method of cooking and the use of our bespoke wood fire grill and oven. Must possess excellent interpersonal and communication skills to lead, coach and guide the kitchen brigade and relate to all other departments in the hotel. Must have the ability to improve services by communicating and assisting colleagues to understand guest needs.
