Well into its second year, Coal Rooms is housed in the remodelled former ticket office and waiting rooms of the Grade II listed Victorian Peckham Rye train station. We are a refined, stylish and atmospheric restaurant, bar and café offering gutsy and full-flavoured food. The influences on our menu range from modern British, to Europe, Asia and South America. Our open kitchen boasts a large purpose-built smoker and robata grill coupled with a back-of-house prep kitchen, private dining room and butchery suite to facilitate whole beast cookery. The busy modern bar turns out fantastic coffee and fresh pastries during the day and an extensive wine list, world beers and cocktails by night.
We are looking for a highly motivated, passionate and inspirational Head Chef to lead our experienced kitchen team. Your role will encompass management of all kitchen operations on a day-to-day basis; overseeing, recruiting and developing your kitchen team; having full accountability for all food purchasing, costing, raising and maintaining food profit margins; and ensuring HSE compliance is always maintained. Menu development and tastings will also be a key aspect of your role and will be done so in accordance with guidelines set by the general manager and directors.
