In order to gain the confidence of our experienced and highly competent floor and kitchen teams, the Senior sous chef needs to be highly skilled themselves in the practical requirements of a busy and creative restaurant: good man management, concise and clear communication and the ability to read the emotional temperature of a situation are all vital skills. Along with this, a passion for making people happy through the medium of serving them delicious food, and beautiful wine is paramount. Sous chefs at Trullo tend to have an interest in all aspects of running a restaurant, and need to be keen to learn and teach how to pair food and wine. Trullo is a fun and relaxed but rigorous working environment; our working hours are not excessive, and in return, the kitchen team, led by our Senior chefs are expected to bring the highest levels of professionalism and care to their craft.
