Each night we endeavour to tell a story through a selection of plates. This is our response to the world around us, to our curiosity with the native ingredients of a lost island. We move forward with ambitions to increase the awareness of our environment and the effects we, as a business have on it. We serve a tasting menu every evening comprised of the best produce of the day. We serve 28 covers four nights a week (Wednesday to Saturday), meaning that our guests receive an intimate experience. We work hard to source the very best produce and wine, and we spend a lot of time on foraging trips, wine tastings and visits to our producers. It is important to us that every one in the team knows about everything we serve, so a great emphasis is placed on training and knowledge.
We are looking for Strong and inspirational Chefs to join our team. Working with a close knit brigade of 5 chefs the candidates will be responsible for maintaining the high and innovative standards of the cuisine whilst encouraging the already high morale and progressive work environment. Daily contact with Sam Buckley (Chef owner) on creative flow and operation will give support to the role. A more detailed description of individual roles will be discussed during interviews and trials.
The Ideal Candidate:
The candidate should be passionate about food and the current farm to table movement with a keen eye on the contemporary food scene. They should be willing to question traditional method and always assert to push new ideas about food and the working of the industry. We have only just been open a year and a half, but have already achieved great success. Marina O'Loughlin awarded us with a 5/5 review in The Guardian in May 2017, and Lisa Markwell in The Sunday Times awarded us with a 10/10 review in August 2017. We are a team with great ambitions.
