Aaron and Remi are a chef duo that first hit it off when working at The Shed in Notting Hill. The journey to their first proper restaurant in Tooting Broadway was a strong but steady one – from carting cheesecakes on the tube for supper clubs to residencies in Angel and East Dulwich to a shipping container in Pop Brixton (the same one that launched Kricket to stardom).

Their cooking is fiercely original and focuses on traditional techniques of smoking, curing and preserving (hence the name). It’s not meat-heavy, in fact the menu leans further toward the vegetarian and vegan end of the spectrum, with creative small plates that change regularly to profit from the best of the seasons.

Whilst it’s a real gem for Tooting locals, it’s most certainly a restaurant that’s worth the trip across town. To make a proper evening of it, take a detour to the industry-friendly Goldfinch SW17 for a pre-dinner sharpener.
