Much has been written about chef and restaurateur Bill Poon since his death last month, but it feels as though there’s still much to learn about his legacy. The Telegraph’s William Sitwell gave it five stars last week, now it’s Grace Dent in The Guardian raving about Spencer Metzger’s French bistro in Mayfair. “It has you pointing at the plate saying: “Aren’t tomatoes amazing?”, as if they’re a brand new invention.”
