Does London need another smashburger brand? Oui, absolument, if the brand in question is Dumbo, purveyor of patties to Paris’s elite. Founded in 2019 by Charles Ganem and Samuel Nataf, the cult burger group will open its first London location on Bethnal Green Road in Shoreditch in June. Its smashburgers, characterised by aged beef (to be supplied in the UK by HG Walter), lightly brioched potato buns, and le vrai Heinz ketchup, have many famous fans. Indeed, the brand has previously collaborated with Folderol and Septime and catered events for the likes of Virgil Abloh, Nike, and Jacquemus. London is just the first stop on the road to international expansion. To which end, Dumbo’s Ganem and Nataf are linking up with global culinary creatives WE ARE ONA to take the brand worldwide.

Adam Byatt is reinventing the al fresco space at Trinity in Clapham this summer, with the arrival of a sandwich truck, this Friday 30 May, serving what Byatt describes as “Trinity DNA in a sandwich”. ‘Outside’ is led by Trinity chef India before she heads off to Per Se in January. After three years as an incubator space, known for hosting Ling Lings, Anna Søgaard and more, Pasero in Tottenham has a permanent chef patron in Diamantis Kalogiannidis (Da Terra). He’ll oversee the all-day menus and retail offering from 1 June.
Following a recent kitchen fire, Straker’s is taking up temporary residence at Brasseria on Westbourne Grove. Thomas Straker and the team are moving in for three weeks of cocktails, music and wine, with a brand-new menu to boot.
Leo Pembroke, floor manager at Arlington and one of CODE’s 30 Under 30, is taking over Black Lacquer at Hyde London City for a supper club this Saturday 31 May from 7pm to 2am. Tickets cost £75 and include a Martini and a four-course menu by former Fallow and Mangal II chef Will Downes.
A group of students on the Service Design MA course at the Royal College of Art are working on a research project entitled ‘Envisioning Age-Resilient Careers for Women in Hospitality’.
