Launching this September, the wine-forward concept will build on one originally created for Trivet as an informal Monday night wine bar. The fully realised standalone version of the concept will have an extensive by-the-glass wine list and a grill menu including select Trivet signatures. Lake and Bal founded Trivet in 2019, following their time at The Fat Duck, where Lake was executive head chef and Bal was group head sommelier.
