Adam Byatt has started a Substack. After 35 years in the industry, the chef patron of Trinity has seen it all, from the traditional hotel kitchens at Claridge’s during his apprenticeship in the ‘80s to the Boiling Point-era machismo of the ‘90s. We’d call him an elder statesman but, at 51, that feels too soon. He is, however, an industry veteran, and we’ll be following his Substack for cooking tips and restaurant recommendations. His rules on resting meat are revelatory.
Acid Reflex, Jonathan Nunn’s new regular column is an essential read. This week, he removed the paywall and devoted most of his column to the news that Guyanese restaurant Kaieteur Kitchen and three other traders at Castle Square in Elephant and Castle face eviction. It’s an upsetting read, but there are ways to lend support particularly if you’re Southwark-based.

Class calls All My Gods in Bethnal Green, East London “this summer’s most daring bar launch” even if no wheels were reinvented in the making of it: “It’s a pool table, it’s cold beer, it’s loud music. That’s basically it.” If you can’t get to E2 for an £8 Martini from the ‘Martininator’ or a buzzball from the vending machine, you can at least read about it.
