Role Overview
Sohaila is seeking a dynamic, creative, and highly organised Head Chef to lead kitchen operations and drive continuous culinary innovation. This role focuses on delivering exceptional Middle Eastern–inspired dishes, revisiting and evolving the menu, and implementing a partial menu restructure to elevate the guest experience.
Key Responsibilities
- Menu Development & Innovation
- Lead on menu ideation, development, and refinement, with a strong emphasis on seasonal, sustainable, and culturally rooted flavours.
- Conduct ongoing menu reviews and partial restructuring to maintain freshness, creativity, and consistency.
- Introduce innovative dishes and techniques to keep Sohaila’s culinary identity evolving.
- Work closely with the senior team to ensure menu changes align with brand ethos and business goals.
Kitchen Leadership
- Manage all daily kitchen operations to the highest professional standard.
- Train, mentor, and supervise kitchen staff to maintain exceptional food production and service.
- Uphold kitchen discipline, cleanliness, and adherence to hospitality and food-safety regulations.
- Oversee stock levels, ordering, supplier relationships, rotas and cost control.
Quality & Service
- Guarantee consistent dish quality, portion control, plating standards, and taste excellence.
- Implement and maintain high-level kitchen systems, processes, and SOPs.
- Ensure smooth execution during service, communicating effectively with the FOH team.
Fat Macy’s Programme
- Support and mentor trainees as part of Fat Macy’s social-impact model.
- Help deliver a positive training environment that builds culinary skills, confidence, and employability.
- Work collaboratively with the programme lead to integrate trainees into kitchen operations safely and effectively.
Health, Safety & Compliance
- Maintain full compliance with food hygiene, allergen management, HACCP, and EHO standards.
- Ensure kitchen equipment is well-maintained, safe, and properly used by all staff.
Team & Culture
- Foster a supportive, inclusive, and professional kitchen culture in line with Sohaila and Fat Macy’s values.
- Participate actively in team meetings, training, and development initiatives.
Lead by example, demonstrating passion, care, and respect in all aspects of the role.
