Carousel is one of the city’s most vibrant culinary hubs, home to an award winning programme of international Guest Chef residencies, a critically acclaimed Wine Bar and a regularly-changing roster of big ticket events.

About you

We are on the hunt for a Senior CDP to join our diverse team of chefs to work across Carousel’s Wine Bar, Guest Chef residencies and Events. The focus here is on quality cooking, a regularly changing menu, a happy team and a good work-life balance. If you have experience working in a busy, high quality restaurant then get in touch!

Key Responsibilities

  • Consistently produce high quality dishes inline with the recipes and training provided
  • Work across the 3  sections of the business (chef  chef residencies, Wine bar, events, offsites)
  • Making sure the proper MEP  is done in time  for the wine bar, events and guest chef residencies.
  • Able to execute wine bar lunch services and events up to 30 pax on your own
  • Reporting stock and prep levels to your direct report
  • Maintaining a safe and hygienic work environment in accordance to our HACCP policy
  • Understanding our HACCP policy and have at least a  level 2 management certificate (optimal level 3)
  • The upkeep of Alert 65 with all data entered twice daily
  • The upkeep of the dry store and cold room
  • To lead at least one guest chef residency per month, and to be responsible for the timing and quality of the food each night. Although we work with chefs from all over the world ultimately the responsibility lies with the Carousel kitchen team on delivering quality
  • Upkeep of the organisation inside walk-in fridges and freezers, as well as lowboy section fridges and freezers
  • Looking after kitchen equipment, reporting broken items to your direct report
  • Organising invoices, allocating amounts per department and dealing with send backs
  • Staying on top of key stock levels like charcoal, bread, veg oil, olive oil, cleaning chemical supply
  • Planing work days and organised prep lists for the team and with guest chefs
  • Placing orders accordingly always double checking what’s in stock
  • Making sure a family meal rota is done a week or two weeks in advanc

Requirements

  • At least 2 years experiences as a CDP in a high standard establishment
  • Experience managing people
  • Able to work comfortably under pressure
  • To be able to work in a team environment and keep morale high
  • Being organised and efficient and happy to multitask Energetic with a can do attitude
  • Confident in using Excel and other basic organisation software
  • Level 2 hygiene certificate
