
Head Chef, Capricci
The Role
Capricci is an Italian restaurant and wine bar located behind the Tate Modern gallery. Opened in 2016, it delivers excellent quality Italian food thanks to a great selection of ingredients and a daily changing menu, following what is available on the market. Capricci is looking for a Head Chef able to deliver his idea of cuisine which has to take inspiration from Italian tradition while using the best ingredients available in the UK.
We require a Head Chef with experience both with Italian food and London restaurant market for a minimum of 5 years. Moreover we expect the following characteristics:
- Implement new dishes and an exciting menu every week;
- Supervise the kitchen performance, training the kitchen team in delivering perfect execution of the dishes and in their career progression;
- Managing suppliers relation;
- Prepare a monthly food cost and GP analysis to be discussed with the team, together with analysis of the best seller on a monthly basis;
- Work in collaboration with MD to ensure that Kitchen & Floor performance is set to high standard;
- Food Safety Level 3 minimum required;
- Be complaint with health and safety, food safety and HACCP regulations.
