We are looking for a strong Restaurant Manager to oversee the day to day operations of The Millbrook Inn, an iconic dining pub in South Pool, near Kingsbridge, in the stunning South Hams region of Devon.

The 16th century freehouse, family owned since 2021, has been extensively renovated in both front and back of house in 2022 and 2023. In 2023, we added 2 luxury holiday cottages just across the road from the pub.

The Millbrook Inn occupies a unique position between Land and Sea, and this position is embodied in everything that we do. On the land side, we work closely with our organic regenerative meat farm, Fowlescombe, just 10 miles away, as well as our onsite smokery and charcuterie, Rare and Pasture. On the sea side, we are located just at the head at a hidden creek, which at high tide is accessible by boat from Salcombe, and we enjoy a privileged, personal relationship with local fishermen. Enjoying the best produce as we do, we cook our ingredients simply over fire.

As part of a growing family operation spanning Fowlescombe Farm, with its own luxury hospitality operation opening in late 2024, Rare and Pasture and The Millbrook Inn, the role offers a significant opportunity for a career minded person with a strong interest in sustainably sourced food and quality design.

  • Responsible for the daily operations and maintenance of the pub, bar & cellar; overseeing all aspects of the pub’s quality & hygiene, maintaining stocks of back of house equipment
  • Confidently & professionally resolving customer issues & complaints
  • Demonstrating proven management & organizational skills
  • Developing the products and services on offer in the pub and maintaining stock (including all bar orders & stock takes)
  • Responsible for all technology within pub, including till operations and pricing, card payments, phone and back of house equipment
  • Liaising with the accounts team for weekly banking, paying in and invoice queries
    Communicating our food philosophy & values to customers
  • Building a rapport with locals, regulars & VIPs, as well as with key suppliers
  • Effectively communicating with the kitchen team both in and outside of service hours, including publishing menu and maintaining oversight of bookings & special events
  • Staff training, both product specific and general
  • Actively seeking to participate in creative discussions and contributing ideas to develop the Millbrook and its offering
