Colette to open in Chelsea

On 20 January 2020 traiteur and deli Colette will be opening in Chelsea. Colette will serve fresh food with sustainable produce, seeking to create a home-from-home experience. With seasonality at the heart of the menu, the dishes will change on a monthly basis.

Chris Hill, who most recently worked for John Williams at The Ritz, will head the kitchen at Colette, combining his culinary expertise with ethical sourcing and fresh produce. Sample dishes will include hearty fish pie, rich truffle torteillini with celeriac and twice baked cheese soufflé.

Lighter lunchtime options will also be available, such as seared tuna with pickled turnip and edamame, or smoked chicken with coriander, mango and cashew. Those with a sweet-tooth can enjoy dishes such as caramelised apple tart, whilst weekend specials include celeriac and mushroom wellington.

On offer at the deli will be a selection of wines, artisan cheeses and chocolates, as well as a spread of meats and smoked salmon, caviar and truffles.

The interior design will bring mid-century classicism into modern Chelsea, with features such as stilnovo wall lights and 9m long counter made from American walnut.
