Orrery by Pierre Minotti, the ambitious new Marylebone restaurant from The Evolv Collection, has an opening date: 26 March. The eponymous Minotti, formerly of two Michelin star Alex Dilling at Hotel Café Royal, will build on the gastronomic legacy of the long-established Marylebone restaurant, founded in 1997 by the late Sir Terence Conran and awarded a Michelin star under Chris Galvin in 2000. The goal, expressed without apology, is to regain that star. Minotti’s tasting menus will represent “a dialogue between Escoffier’s principles and British terroir” which will translate on the plate to dishes such as Brittany galette with morel farci, wild garlic, and buckwheat; and bouillabaisse of Cornish mackerel with espelette pepper, finger lime, and a cold saffron-infused broth finished with Isle of Wight sea urchin. The guest experience will commence in the Salon du Vin, where they can get acquainted with the 800-strong wine list, before moving into the velvet, voile, dark wood and rose marble dining room. Minotti’s take on the ‘trou normand’ (a Calvados-soaked sorbet palate-cleanser) will be served mid-meal at a separate marble counter, with a choice of green or yellow Chartreuse – the liqueur of the moment.

Launching at The Cadogan, A Belmond Hotel, London on 2 April: Willett’s, a British bistro from executive chef Michael Turner (The River Restaurant, The Savoy Grill). What’s cooking? Chicken and morel pie, jam roly-poly, and Sunday roasts.
Will Devlin of Acre (the group behind Birchwood and Michelin Green Star The Small Holding) is partnering with London members’ club The Conduit. He’ll open a café wine bar there this summer. A rooftop restaurant will follow in the autumn.
A new Italian restaurant from Sheffield restaurateurs Jack Wakelin and Ronnie Aronica of Bench and Pearl is on the way. Bookings are now being taken for preview week, 18-22 March, at 25% off. Expect hand-cut pasta and open fire cooking.
