Poon’s has been part of London’s restaurant story for over fifty years. Bill and Cecilia Poon opened the original in Soho in 1973, before moving to Covent Garden where they earned a Michelin star in 1980. It became one of the most loved Chinese restaurants in the city – the kind of place people still talk about decades later.
Now Amy Poon, Bill and Cecilia’s daughter, has brought it back. After years of pop-ups and building a loyal following of her own, she opened Poon’s at Somerset House in late 2025, set in the New Wing on Lancaster Place. The food is rooted in Chinese home cooking; focusing largely on steaming. The claypot rice her father introduced to the UK fifty years ago, slow-cooked Magic Soup, wind-dried meats made to her grandfather’s recipe. It’s the kind of cooking that’s hard to find in a restaurant because it takes time, care and a deep knowledge of where it comes from.
We’re a family-rooted restaurant with high standards and a loyal following, and we need someone who can help us maintain both.
You’ll be front-of-house focused, operationally strong, and the kind of person guests remember. You’ll work closely with the General Manager and take real ownership of the day-to-day — from how the room feels at the start of service to how guests leave at the end of it.
Experience at a similar level is essential. Beyond that, we’re looking for the right fit, not just the right CV.
The role 48 hours per week, Tuesday to Saturday. We’re closed Sundays and Mondays — because we think two proper days off in a row actually matters.
