The Role
You’ll be running your own section and taking real pride in what comes off it. Yes, it gets busy – but this isn’t a kitchen that shouts. We work together, we look after each other, and we care about getting it right. You’ll be cooking food that’s thoughtful and seasonal, working alongside a team who genuinely love what they do.
Key Responsibilities
- Own your section – keep it running smoothly, consistently, and with real care
- Cook and present dishes the Poon’s way, respecting our recipes and the ingredients behind them
- Work closely with the Sous Chef and Head Chef to keep service flowing and the team supported
- Keep an eye on stock, cut down on waste, and flag anything that doesn’t look right
- Make sure food is stored and handled properly – we take hygiene seriously
- Keep your section clean, safe, and organised throughout the shift
- Be someone the junior chefs can learn from – share what you know and bring others up with you
- Get stuck into menu development and seasonal dishes – your ideas are welcome here
- Cook every dish like it matters, because to us, it does
What We’re Looking For
- Solid experience as a Chef de Partie -you know how a section works and you’re comfortable owning it
- A love of Cantonese or Asian food would go a long way, but a curiosity and willingness to learn matters just as much
- Good knife skills and a strong all-round technical base
- Someone who keeps their cool when it gets busy and brings a positive energy to the kitchen
- A good communicator who enjoys being part of a team
- Real attention to detail -you notice when something’s not quite right and you do something about it
- A food hygiene certificate (Level 2 at least; Level 3 is a bonus)
- Happy to work evenings, weekends, and the occasional bank holiday
