Who we are
Miokuru is a new counter dining restaurant opening in Soho in May 2026, specialising in temaki’s alongside Japanese inspired starters, desserts, and a strong drinks programme of cocktails, sake and wine. Eighteen covers at the counter, a small PDR for private hire, and a relentless focus on guest experience. Sustainably sourced, predominantly British seafood. This is site one, we don’t plan to stop here.
The role
We’re looking for an ambitious senior sous chef or junior head chef ready to own a kitchen from day one. You’ll work closely with the Founder through the opening and beyond, taking genuine responsibility for the team and operation while learning the full picture of what it takes to run a site. As we open further locations, so does your opportunity.
Lead and manage daily kitchen operations, running key service shifts
Recruit, train and mentor a small, tight knit kitchen team
Own stock control, ordering, and supplier relationships
Maintain food hygiene and safety standards
Manage allergen protocols confidently across all service
The counter comes first
Being a guest facing role, this means you need to be warm, personable and genuinely engaged with every guest. We’re looking for someone who loves that dynamic and brings big energy, not someone who prefers to stay out of sight.
