About Us:
Newhall Mains is a Michelin key hotel situated in the heart of the Scottish Highlands. The premises consist of a series of luxury cottages and suites. With its own private airfield, restaurant, whisky bar and unrivalled approach to detail, we are in the process of building out one of the country’s leading hospitality businesses.
The Role:
We are looking for a sous chef to join our kitchen. As a small team you will have the chance to learn a whole range of skills and techniques whilst helping on all aspects of the menu. From whole animal butchery, fresh pasta, pastry skills and lots more. We have a strong focus around producing as much as we can in the kitchen. We are a family-run business, which takes pride in using locally-sourced produce, and we are looking for someone who can build on this ethos. We are fortunate enough to have access to a wonderful selection of local ingredients including lobster, scallops, venison and locally-reared beef, so a passion for fresh food and an ability to forge relationships with local suppliers is key.
The Ideal Candidate:
As a small, family run business, adaptability is crucial, a willingness to step-in everywhere is a key part of this role. The ideal candidate would be someone who is punctual, willing to learn, and can also have some fun.
Key Responsibilities:
- Assisting in food preparation and kitchen management in the head chefs absence
- Ordering stock and monitoring costings/ wastage
- Cooking and preparing vegetables, meats, fish and pastry
- Helping with deliveries and restocking
- Assisting with stock rotation
- Helping maintain kitchen and food safety standards
What we can offer you:
- £40,000 per annum plus tronc (gross £45k)
- £1,000 relocation / sign on bonus
