Having opened its doors on 10th June 2026, Brutes is an ambitious independent business focused on creating exceptional drinks, memorable guest experiences, and aims to contribute to the rich hospitality landscape of London.
We’re looking for an experienced Bar Manager to lead the team and play a key role in building Brutes into one of Mayfair’s leading cocktail and hospitality destinations.
This role combines leadership, operations, hospitality and creative input, offering the opportunity to play an active role in the development of drinks, menus and guest experiences as the business evolves.
This role is for a hospitality professional who leads from the floor, thrives on high standards, and enjoys building strong teams, strong culture and memorable guest experiences.

What You’ll Do
Lead, motivate and develop the bar and floor team
Deliver exceptional hospitality standards throughout every service
Manage day-to-day venue operations
Oversee recruitment, onboarding and training
Drive service standards, team performance and guest satisfaction
Manage stock control, ordering and inventory
Ensure compliance with licensing, health & safety and food safety requirements
Oversee reservations, bookings and guest communications
Manage CRM systems and guest database integrity
Ensure VIPs, regulars and key guests receive exceptional and personalised hospitality
Work closely with the team to optimise reservations, table utilisation and guest flow
Work closely with the founders to help shape the future of the business
Creative & Menu Development
Work closely with the founders on cocktail development, menu evolution and seasonal changes
Contribute ideas for drinks, ingredients, guest experiences and service rituals
Support the testing, costing and implementation of new cocktails and menu items
Help maintain Brutes’ identity through thoughtful, detail-driven menu development
Stay informed on industry trends, products and techniques whilst ensuring all additions remain commercially viable and operationally practical
Assist in training the team on new drinks, menu updates and product knowledge
Whilst Brutes is built on consistency and operational excellence, we believe creativity is an important part of great hospitality. We are looking for someone who enjoys contributing ideas and helping shape the future direction of the bar.
What We’re Looking For
Previous management experience within quality cocktail bars, restaurants, members’ clubs or hospitality venues
Strong cocktail, spirits and service knowledge
Excellent leadership and people management skills
Highly organised with strong attention to detail
Commercial awareness and operational confidence
Experience using CRM, reservations and booking systems
Confidence managing guest databases, reservations, bookings and VIP guest experiences
Strong understanding of guest journey, table management and reservation-led service
Calm, professional and solutions-focused approach
Passion for hospitality and team development
