    Job Title: Restaurant Manager

    Location: Hausu, Peckham
    Reports To: General Manager / Owner

    Job Overview

    We are seeking a knowledgeable and passionate Restaurant Manager to lead daily operations while helping to curate and maintain the restaurant’s wine program. This role blends operational leadership with deep wine expertise, ensuring an exceptional guest experience through wine recommendations and pairings, staff education, and cellar management.

    Key Responsibilities

    Restaurant Operations

    Oversee daily front-of-house operations to ensure smooth, efficient service
    Maintain high standards of hospitality, cleanliness, and presentation
    Manage reservations, guest flow, and service quality
    Handle guest feedback and resolve issues promptly

    Wine Program Management

    Curate and maintain a diverse, high-quality wine list aligned with the restaurant’s concept
    Build relationships with suppliers and negotiate pricing and allocations
    Monitor inventory, storage conditions, and stock rotation
    Develop wine pairing recommendations and seasonal updates

    Team Leadership & Training

    Recruit, train, and supervise front-of-house staff
    Educate team members on wine knowledge, service techniques, and upselling
    Conduct regular tastings and training sessions
    Foster a positive, professional, and collaborative team culture

    Financial Management

    Work with the Owners/GM to forecast budgets, cost control, and profitability targets
    Analyse wine revenue and margins
    Implement strategies to increase wine sales and overall guest spend

    Compliance & Standards

    Ensure compliance with licensing laws and health & safety regulations
    Maintain proper storage and handling of wine according to industry standards

    Qualifications

    Proven experience as a Restaurant Manager or similar leadership role
    Strong knowledge of wine regions, varietals, and food pairings
    Formal wine certification (e.g., WSET, Court of Master Sommeliers) preferred but not essential
    Personal License holder preferred, but not essential
    Excellent leadership, communication, and organizational skills
    Passion for hospitality and delivering outstanding guest experiences
